Ingredients (10)

30.00 ml butter
1.00 onion — chopped
30.00 ml flour
5.00 ml mustard — powder
5.00 ml salt and freshly ground black pepper — to taste
1.00 pinch nutmeg — ground, pinch
125.00 ml milk
125.00 ml stock — chicken
750.00 ml sweetcorn — fresh or frozen
1.00 handful fresh parsley — chopped

Method:

1. Melt the butter in a saucepan and sauté
the onion until soft and shiny. Add the flour,
mustard, salt, black pepper and nutmeg
and stir until mixed. Add the milk and
chicken stock and stir with a wire whisk
until smooth. Stir until thickened. Add the
mealie kernels and allow to simmer for
a few minutes.

2. Add the parsley and serve.
