Creamy chicken phyllo pie

    chicken breasts, cubed

    onion, sliced

    fresh button mushrooms, halved

    red pepper, sliced
  • 1
    packet instant creamy chicken mix
  • 400
    ml
    milk
  • 10
    ml
    freshly chopped tarragon
  • 400
    g
    phyllo pastry
  • 45
    ml
    melted butter
 

Method

about 25 minutes
 
Heat the oil in a large saucepan. Add the chicken, onion, mushrooms and red pepper and sauté; for 3 minutes. Remove from the heat. Make up the instant mix according to pack instructions. Add to the chicken mixture and stir in the tarragon (use 3 ml dried, if you don't have fresh). Mix to combine. Spoon mixture into a greased ovenproof dish. Brush the pastry sheets with melted butter. Scrunch the phyllo sheets and place on top of the chicken mixture. Bake in a preheated 180 °C oven for 20 minutes, or until golden brown.
