Ingredients (5)

FILLNG:
1.00 onion — thinly sliced
15.00 ml butter
250.00 ml mature cheddar cheese — pecorino or Emmenthal cheese, grated
100.00 ml cream — thick
quantity basic egg custard (see recipe)
1.00 ml nutmeg — ground

Method:

Preheat the oven to 200 ºC. Line a 30 cm quiche pan with the shortcrust pastry and bake blind.
Reduce the oven temperature to 180 ºC. Over low heat, sauté the onion in the heated butter until golden brown and done. Spoon into the pie crust, spreading evenly. Add the cheese and cream to the egg custard, stirring to mix. Carefully pour the custard over the onion, sprinkle with nutmeg and bake for about 30-40 minutes until the filling has set and is golden brown. Remove from the oven, leave to cool slightly and serve with a green salad.
