Creamy bran rusks

    salt

    baking powder

    bran
  • 350
    g
    butter or margarine
  • 300
    ml
    sugar
  • 125
    ml
    poppy or sesame seeds
  • 1
    Litres
    fresh cream
 

Method

Preheat the oven to 180 ºC and spray an oven pan with non-stick spray. Sift the dry ingredients together, add the bran and rub in the butter. Add the sugar and poppy or sesame seeds and mix well. Stir in the cream, mixing well. Turn into the prepared oven pan, spreading the mixture evenly. Mark the dough into small fingers and bake for about 45 minutes or until done. Turn out the rusks onto a wire rack and leave to cool. Break or slice the rusks into fingers. Dry out at 100 ºC. Cool and store in an airtight container. Makes about 100 small fingers.
