    onion, sliced into rings

    cloves garlic, crushed
  • 1
    green pepper, seeded and diced (optional)

    carrots, sliced into rings and boiled till soft
  • 840

    haricot or butter beans, drained
  • 410
    g
    peas, drained, frozen peas
  • 125
    ml
    Nestlé Ideal Evaporated Milk
  • 5
    ml
    ground ginger
  • 5
    ml
    origanum
  • salt and freshly ground black pepper
  • about 15 ml cornflour, blended with a little water
 

Method

 
Sauté the onion, garlic and green pepper in a little oil till soft. Add the carrots and stir-fry for about one minute. Add the beans, peas and milk and flavour with ginger, origanum and salt and pepper to taste. Bring to the boil, stirring occasionally. Add the cornflour paste and simmer till the sauce thickens slightly. Use more cornflour if necessary. Serve with rice. Serves 2-3.
