Creamed ricotta with honey, fruits and nuts

    g
    fruits in season, washed or peeled and sliced
  • 125
    ml
    honey
  • 90
    ml
    sweet dessert wine (or even Cointreau or Triple Sec liqueur)
  • 300
    g
    fresh ricotta cheese
  • 15
    ml
    lemon zest
  • 15
    ml
    lemon juice
  • 65
    ml
    castor sugar
  • 65
    ml
    plain cream cheese
  • 50
    g
    pistachio nuts
  • Some pieces of honeycomb (optional)

Place the fruit in a glass dish.
Mix the honey and wine and pour over the fruit.
Allow to macerate for an hour or so at room temperature.
Mix the ricotta with the lemon zest and juice, castor sugar and cream cheese and place on a serving platter.
Drain the fruit (reserve the juices) and arrange around the cheese.
Drizzle the whole lot with the honey and wine mixture and sprinkle with the nuts.
Add a few pieces of honey comb and serve.
