Creamed potatoes with caramelised onions

  • 900
    g
    potatoes, peeled
  • 3
    large onions, cut into rings
  • 40
    ml
    olive oil
  • 50
    g
    butter
  • 150
    ml
    cream
  • salt and white pepper
 

Method

 
1. Place potatoes in salt water, cover and bring to a simmer for 20 minutes or until tender. Meanwhile put olive oil and onions in a large frying pan and cook over a low heat for 15 to 20 minutes. 2. Drain potatoes, press through a sieve and add butter, cream and seasoning. Pile in a warmed serving dish and top with drained caramelised onions.
