Couscous with stir-fried vegetables

    olive oil
  • 1
    onion, halved and sliced
  • 100

    carrots, cut into strips
  • 100
    g
    young green beans, halved
  • 1
    yellow pepper, sliced into strips
  • 100
    g
    baby marrows, sliced into strips
  • 300
    ml
    couscous
  • 300
    ml
    hot water or vegetable stock
  • 100
    g
    mushrooms, sliced
  • salt and freshly ground black pepper to taste
 

Method

 
Heat the oil in a large saucepan and sautè the onion until soft. Add the carrots and beans and sautè for 6 minutes. Add the pepper and baby marrows and increase the heat to high. Stir in the couscous, water or stock, mushrooms, salt and pepper. Cover and simmer for 1 minute. Remove the saucepan from the heat and leave to stand for 10 minutes or until the couscous has absorbed the liquid. Stir the mixture with a fork and serve immediately
