Couscous with chicken and vegetables

    couscous
  • 50
    g
    butter
  • 30
    ml
    olive oil
  • 2
    ml
    each of cinnamon, paprika and cayenne pepper
  • 4
    chicken breast fillets, sliced
  • 200
    ml
    chicken stock
  • 300
    ml
    mixed roasted vegetable slices
  • 30
    ml
    sultanas
  • 20
    ml
    each freshly chopped coriander and parsley
 

Method

Prepare couscous according to packet instructions. Stir in butter. Heat oil and add spices. Stir-fry chicken in oil for 2 minutes until just cooked. Stir in chicken stock. Mix into prepared couscous along with roasted vegetables, sultanas, herbs and seasoning to taste. Serves 4.
