Couscous with bacon

    butter

    bacon, chopped

    red onion, roughly chopped
  • 400

    couscous
  • 400
    ml
    hot chicken or vegetable stock
  • 1
    garlic clove, crushed
  • salt and freshly ground black pepper
  • 200
    g
    feta cheese, coarsely crumbled
  • 100
    g
    English spinach
 

Method

 
Heat the butter in a saucepan and sautè the bacon and onion until the bacon is brown and the onion soft. Stir in the couscous, stock, garlic, salt and pepper. Cover the saucepan and remove from the heat. Leave to stand for 10 minutes or until the couscous has absorbed the liquid. Stir with a fork and gently mix in the feta and spinach. Serve immediately.
