Couscous salad with smoked chicken and rocket

    couscous

    ml
    butter

    fresh rocket
  • 1
    radicchio (or packet of mixed bitter salad leaves)

    small cucumber, thinly sliced
  • 1
    red pepper, seeded and finely
  • 350

    smoked chicken breasts
  • 150
    g
    salad cream (or good-quality mayonnaise)
  • 50
    ml
    fresh basil, shredded

Pour 250ml boiling water over the couscous, cover with a tight-fitting lid and set aside to steam for 10 minutes. Heat the butter in a large frying pan. Add the couscous to the pan and cook, stirring with a fork for five minutes. Set aside to cool.

Tear any large rocket leaves into smaller pieces and separate the radicchio into bite-sized leaves. Add the cucumber and the pepper to the couscous and mix well. Divide among the serving plates. Slice the chicken and place on top of the salad. Top with a spoonful of salad cream or good-quality mayonnaise.
Garnish with the basil, season to taste and serve immediately.
