Couscous salad with peppers and brinjals

    olive oil

    small onion, chopped
  • 1
    small aubergine, diced
  • 150

    red sweet pepper, cored, seeded and diced
  • 500

    couscous, cooked (see tips)
  • 30
    g
    fresh coriander, chopped
  • 60
    ml
    wholegrain mustard
  • 5
    ml
    each crushed garlic and chopped chilli
  • salt and milled pepper
  • DRESSING
  • 200
    ml
    natural yoghurt
  • 30
    g
    fresh coriander, chopped
  • 30
    ml
    lime or lemon juice
 

Method

 
Heat the olive oil in a frying pan. Fry onion, brinjal and sweet pepper until softened. Add to couscous. Add coriander, mustard, garlic and chilli. Toss lightly. Season to taste with salt and pepper. DRESSING: Mix all ingredients together and serve with salad, if desired.
