Couscous salad

Ingredients

  • 1/4
    cup
    couscous
  • 2
    tsp
    pesto
  • salt and pepper
  • 1
    tsp
    lemon juice
  • 5
    tomatoes, halved or quartered
  • 1
    cucumber, quartered in length and then cut crosswise into pieces
  • 2
    Tbs
    chopped pecans
 

Method

Put 1/3 cup of water to boil in a hot pot where you will add the couscous with a pinch of salt, and then cover it and turn the stove off.

Leave it for at least five minutes until all the water has been absorbed. Mix the steaming couscous with pesto and lemon juice and put it in a bowl, preferably wide and shallow. Season it with pepper and toss in the tomatoes and cucumbers.

In the end add the pecans, the salad and season it more with salt and pepper to match it with your taste.
