Couscous, fig and apple salad

    instant couscous
  • 300
    ml
    boiling water
  • 5
    ml
    salt
  • 30
    ml
    orange juice
  • 30
    ml
    butter
  • 150
    g
    dried figs, halved
  • 2
    red apples, cored, sliced into rings
  • 150
    g
    green beans, blanched
  • DRESSING
  • 60
    ml
    olive oil
  • 15
    ml
    white wine vinegar
  • 2
    garlic cloves, peeled and crushed
  • milled pepper
 

Method

 
Place couscous and boiling water in a saucepan. cover and leave to stand for 15 minutes, or until water has been absorbed. Add salt and fork through couscous to separate grains. Heat orange juice and butter in a frying pan and add figs and apple. Cook gently on both sides until golden. DRESSING: Shake ingredients in a screw-top jar until blended. Arrange beans in a bowl and pile couscous and fruit in centre. Drizzle dressing over and serve.
