Couscous and marinated mushroom salad

    couscous
  • 2
    bunches spring onions, chopped
  • 10
    cherry or baby roma tomatoes, halved
  • 45
    ml
    chopped parsley
  • 2
    cloves garlic, crushed
  • 125
    ml
    olive oil
  • 30
    ml
    white wine vinegar
  • 30
    ml
    balsamic vinegar
  • 2
    ml
    sugar
  • salt and milled pepper
  • 250
    ml
    marinated mushrooms, or more if desired
 

Method

 
Prepare couscous according to packet instructions. Set aside. Mix remaining ingredients, except mushrooms. Stir gently to blend flavours and dissolve sugar. Stir in mushrooms, then, using your fingertips, gently add couscous to vegetable mixture. Adjust seasoning if necessary and serve at room temperature.
