Couscous and butter bean burgers

Ingredients (21)

400 g butter beans — tinned
1 cup couscous — cooked
2 garlic — cloves, crushed
10 g fresh parsley — chopped
2 Tbs flour
pinch Bicarbonate of soda
3 Tbs fresh chillies — 573
sea salt and freshly ground black pepper
PICKLED ONION:
1/2 red onion — finely sliced
lemon — juice only
1 tsp sugar
Chilli poppers:
10 jalapeños — pickled
100 g cream cheese
1/2 cup ricotta cheese — crumbled
1 eggs — beaten
100 g flour — seasoned
1 cup breadcrumbs
oil — for deep frying
TO SERVE:
6 lettuce
1 cup tzatziki
4 bread — rye rolls, halved, toasted

Method:

Blitz butter beans in a food processor until smooth. Add couscous, garlic, parsley, flour, bicarb and olive oil. Blitz once to just combine. Remove mixture from processor, shape into 4 patties. Place on a lined baking tray and refrigerate until firm.

Heat a frying pan with a little oil, fry patties on both sides until golden and cooked through. Season to taste.

For the pickled onion:

Place red onions in a bowl, add the lemon juice and sugar, stir to combine; allow to stand for 5 minutes.

For chilli poppers:
Cut a slit down the side of the chillies, remove seeds and membrane. In a bowl, mix together cream cheese and ricotta and season well. Spoon small amounts into each chilli. Toss chilli in flour, then egg, then breadcrumbs; fry in hot oil until golden.

To serve:
Fill buns with lettuce, top with red onions, patties, tzatziki, and more red chilli. Serve with chilli poppers.
