Couscous salad with feta, apricots, pecans and strawberries

    couscous (prepared according to pack instructions)
  • 8 to 10 soft dried apricots, sliced
  • 100

    pecan nuts
  • 2
    cloves of garlic, crushed
  • 1
    red chilli, finely chopped
  • handful Italian parsley, chopped
  • fresh chives, chopped
  • 125
    ml
    olive oil
  • juice of two lemons
  • 200

    feta or goat’s milk cheese
  • 200
    g
    strawberries, sliced or diced
 

Method

Mix the couscous, apricots and pecan nuts. Prepare a dressing by mixing the garlic, chilli, parsley, chives, olive oil and lemon juice, and add the crumbled cheese to marinate for a while.

Mix the salad dressing and cheese into the couscous and spoon it into a salad bowl. Garnish with strawberries or pomegranate seeds and serve.
