Ingredients (7)

375.00 ml couscous
250.00 ml stock — vegetable, weak
125.00 ml orange juice
15.00 ml fresh chillies — 573
salt and freshly ground black pepper
10.00 ml butter
10.00 ml orange — zest only

Method:

Place the couscous in a glass dish. Bring the vegetable stock, orange juice and olive oil to the boil and pour the boiling mixture over the couscous.
Leave for about 5 minutes until the liquid has been absorbed. Fluff up with a fork and season with salt and pepper.
Microwave the couscous for 1 minute on 100 per cent power, add the butter and mix. Microwave again for 1 minute on 100 per cent power. Fluff up once more and mix in the orange rind.
