    ml
    couscous
  • 250
    ml
    weak vegetable stock
  • 125
    ml
    orange juice
  • 15
    ml
    olive oil
  • salt and pepper
  • 10
    ml
    butter
  • 10
    ml
    freshly grated orange rind
 

Method

 
Place the couscous in a glass dish. Bring the vegetable stock, orange juice and olive oil to the boil and pour the boiling mixture over the couscous. Leave for about 5 minutes until the liquid has been absorbed. Fluff up with a fork and season with salt and pepper. Microwave the couscous for 1 minute on 100 per cent power, add the butter and mix. Microwave again for 1 minute on 100 per cent power. Fluff up once more and mix in the orange rind.
