Courgettes With Tomato

    sunflower oil

    onion, chopped

    courgettes, cut into chunks
  • 250

    chicken stock
  • 500
    ml
    chopped fresh tomatoes
  • 15
    ml
    cornflour
  • 25
    ml
    lemon juice
 

Method

1. Heat the oil in saucepan and sauté the onion until golden. Add the courgettes to the pan and fry until browned. Add the chicken stock and the tomatoes, and bring to the boil. Reduce the heat and simmer for five minutes.

2. Mix the cornflour and the lemon juice. Stir into the vegetables. Keep stirring until the mixture has thickened slightly and the courgettes are tender. Season to taste.
