Ingredients (10)

900.00 g potatoes — peeled and halved
225.00 g courgettes — coarsely grated
25.00 g butter
30.00 ml sour cream
1.00 eggs — large
sea salt and freshly ground black pepper
30.00 ml capers
45.00 ml fresh chives — chopped
30.00 ml flour
30.00 ml vegetable oil — for frying

Method:

1. Boil potatoes for 15 minutes until soft. Drain, place in a bowl with the grated courgettes and mash with butter and sour cream.
2. Mix in egg, seasoning, capers, chives and flour. Allow to cool.
3. Shape into 4 cakes, adding a little more flour if mixture is too soft. Heat oil and fry cakes for 5 to 7 minutes until firm.
4. Remove from the pan and place under a preheated grill for 5 to 7 minutes to brown. These cakes go well with grilled fish.
