Courgette potato cakes

Ingredients

  • 900
    g
    potatoes, peeled and halved
  • 225
    g
    courgettes, coarsely grated
  • 25
    g
    butter
  • 30
    ml
    sour cream
  • 1
    large egg
  • salt and freshly ground black pepper
  • 30
    ml
    capers
  • 45
    ml
    chopped fresh chives
  • 30
    ml
    flour
  • 30
    ml
    vegetable oil for frying
 

Method

30 minutes
 
1. Boil potatoes for 15 minutes until soft. Drain, place in a bowl with the grated courgettes and mash with butter and sour cream. 2. Mix in egg, seasoning, capers, chives and flour. Allow to cool. 3. Shape into 4 cakes, adding a little more flour if mixture is too soft. Heat oil and fry cakes for 5 to 7 minutes until firm. 4. Remove from the pan and place under a preheated grill for 5 to 7 minutes to brown. These cakes go well with grilled fish.
