Courgette dish

    onions, sliced
  • 450
    g
    courgettes, rinsed and sliced
  • 2
    ripe tomatoes, skinned and finely chopped
  • 410
    g
    ratatouille
  • 5
    ml
    origanum
  • sugar
  • parsley
  • salt and freshly ground black pepper
 

Method

 
Sauté; the onion in a little oil until tender. Add the courgettes and stir-fry until lightly browned. Add the tomato and ratatouille and seasonings. Reduce the heat and simmer until the vegetables are tender but still crisp.
