10.00 ml butter
1.00 onion — chopped
6.00 garlic — cloves, chopped
12.00 courgettes — grated
375.00 ml rice — basmati, cooked
125.00 ml fresh parsley — chopped
250.00 g ricotta cheese — crumbled
100.00 g parmesan cheese — grated

Method:

Preheat the oven to 180¦C.
heat the butter in a frying pan.
Add the onion and garlic and cook until soft.
Add the courgettes and fry for 2 minutes.
Add the rice, parsley and cheese.
Place the stuffing in a baking dish and bake.
