Courgette and parmesan stuffing

    butter

    onion, chopped
  • 6
    garlic cloves, chopped
  • 12
    courgettes, grated
  • 375
    ml
    basmati rice, cooked
  • 125
    ml
    parsley, chopped
  • 250
    g
    ricotta cheese, crumbled
  • 100
    g
    parmesan, grated
 

Method

Preheat the oven to 180¦C.
heat the butter in a frying pan.
Add the onion and garlic and cook until soft.
Add the courgettes and fry for 2 minutes.
Add the rice, parsley and cheese.
Place the stuffing in a baking dish and bake.
