Courgette and feta salad

    courgettes, sliced
  • 200

    fresh button mushrooms, sliced
  • 225

    feta cheese, diced
  • 4
    stalks celery, chopped
  • 2
    red peppers, cut into strips
  • 1
    small onion, sliced
  • 15
    black olives
  • DRESSING
  • 90
    ml
    oil
  • 10
    ml
    lemon juice
  • 10
    ml
    honey
  • 2
    cloves garlic, crushed
  • 50
    ml
    chopped fresh parsley
 

Method

 
Arrange the courgettes and mushrooms on a salad platter. Arrange the feta and celery on top and surround with the pepper strips and onion rings. Garnish with olives. Blend the ingredients for the dressing and pour over the salad just before serving. Serves 6-8.
