    tomatoes, skinned, seeded and chopped

    onion, chopped
  • 2
    cloves garlic, finely chopped

    red pepper, seeded and diced
  • 3
    carrots, sliced
  • 3
    sticks celery, chopped
  • 175

    fresh button mushrooms
  • 175

    canned butter beans
  • 400
    g
    red kidney beans, rinsed and drained
  • 400

    black-eye beans, rinsed and drained
  • 300
    ml
    cider
  • 15
    ml
    paprika
  • 10
    ml
    dried mixed herbs
  • fresh herb sprigs, to garnish
 

Method

1 hour 30 min
 
Preheat oven to 180 ºC. Put all the ingredients, expect herb garnish, into a large ovenproof dish and stir to mix. Cover with foil and bake in the oven for about 1 1/2hours, until vegetables are cooked and tender, stirring occasionally. Serve with brown rice, rice noodles or couscous. Garnish with the herb sprigs. Serves 4-6.
