  • 250
    g
    low-fat cottage cheese
  • 125
    ml
    milk
  • 2
    extra-large eggs, separated
  • 50
    ml
    castor sugar
  • 10
    ml
    vanilla essence
 

Method

 
Beat the cottage cheese and milk together until smooth. Beat in the egg yolks. Beat in the sugar and vanilla essence. Beat the egg whites until stiff and fold into the mixture. Pour into a suitable container and place in the fridge. To prevent ice crystals from forming, stir every 30 minutes until frozen. Serves 4.
