Ingredients (11)

2.00 kg corned beef
5.00 black peppercorns — whole
2.00 cloves — whole
1.00 bay leaves
1.00 onion
FRUIT SAUCE
100.00 g brown sugar
410.00 g apples — pie, coarsely chopped
410.00 g apricots — tinned, chopped
2.00 ml mustard — powder
75.00 g sultanas
100.00 ml vinegar — wine

Method:

Place meat in a large saucepan and cover with cold water. Add spices and onion to the saucepan. Bring the water to the boil and simmer meat for two to two and a half hours or until tender. If meat is to be served hot, remove from the liquid, slice thinly and serve with fruit sauce. If meat is to be served cold, cool it in the liquid. Mix ingredients for the sauce and heat. If it’s to be served cold, remove from heat and cool. The taste of the sauce improves if made well ahead of time.
