Corn griddle cakes

Ingredients

  • 225
    g
    cake flour
  • 7
    ml
    baking powder
  • 2
    ml
    paprika
  • salt, to taste
  • 175
    g
    cooked corn kernels
  • 3
    spring onions, thinly sliced
  • 1
    large egg, beaten
  • 125
    ml
    milk
  • 30
    g
    butter, melted
 

Method

10-15 min
 
Sift the dry ingredients into a bowl.
Mix the corn, onion, egg and milk and add to the flour with the butter.
Mix well.
Heat the griddle.
Spoon 45 ml for each cake onto the griddle.
When bubbles rise to the surface, turn and cook the other side until golden.
Serve with the baked eggs.
