Corn and potato chowder

    g
    chopped rindless bacon
  • 1
    onion, chopped
  • 1
    green pepper, chopped
  • 1
    chilli, deseeded and chopped (optional)
  • 3
    tomatoes, peeled, seeded and chopped
  • 2
    potatoes, peeled and cubed
  • 500
    ml
    frozen corn
  • 1
    pinch ground allspice
  • 1
    bayleaf
  • 500
    ml
    chicken or vegetable stock
  • 125
    ml
    cream
  • 25
    ml
    freshly chopped parsley
  • seasoning to taste
 

Method

 
Fry the bacon for two minutes. Remove from the pan.
Add onion, green pepper and chilli if using, and fry for two minutes.
Add tomatoes, potatoes, corn, allspice and bay leaf.
Cook while stirring for five minutes. Add chicken or vegetable stock and bring to the boil.
Reduce heat and simmer covered for 30 minutes.
Add the bacon, cream and parsley and heat through for two minutes before serving.
