Coriander pesto and prawn spaghetti

Ingredients (9)

2 c fresh coriander
2 cloves garlic — cloves, chopped
1 red chilli — chopped
1 tsp salt — to taste
3 tbsp pine nuts — toasted
6 tbsp olive oil — extra virgin
500 g pasta — spaghetti, cooked until al dente
16 prawns — shelled
4 c rocket

Method:

1. In a pestle and mortar or a food processor, smash or process the
coriander.

2.Add the garlic, chilli and salt, and process until you have a wet
paste. Add the nuts and grind these as well.

3. Mix in the oil drop by drop until you have a rich green sauce.

4. Heat a little olive oil in a non-stick frying pan and cook the prawns in two
batches. Toss in the pasta with a little of the reserved cooking liquid and
rocket. Stir in the pesto and enjoy!
