Coriander pesto

  • 125
    ml
    fresh coriander leaves
  • 60
    ml
    fresh parsley
  • 20
    ml
    pine nuts or almonds
  • 100
    ml
    grated Parmesam cheese
  • 5
    ml
    finely chopped garlic
  • 30
    ml
    lime juice
  • 125
    ml
    olive oil
  • salt and freshly ground black pepper to taste
 

Method

 
Blend all the ingredients in a food processor until smooth.
Makes about 250 ml pesto.

IDEAS FOR USING PESTO
Serve with your favourite pasta.
Add to mayonnaise for potato salad.
Add sun-dried tomatoes and feta cheese and serve with pasta.
Mix a little pesto with breadcrumbs and use to coat chicken breasts.
