    ml
    fresh coriander leaves
  • 60
    ml
    apple vinegar
  • 10
    ml
    Dijon mustard
  • 3
    ml
    ground cumin
  • 2
    garlic cloves, crushed
  • 3
    ml
    freshly ground black pepper
  • 2
    ml
    salt
  • 125
    ml
    extra-virgin olive oil
  • 0.50
    lemon, the juice
  • SALAD
  • 1
    x 410 g can kidney beans, drained
  • 1
    x 410 g can butter beans, drained
  • 1
    x 410 g can sweetcorn kernels, drained
  • 1
    medium-sized red onion, chopped
  • lemon or lime slices for garnishing
 

Method

 
SALAD DRESSING
Blend all the salad dressing ingredients in a food processor until smooth.
SALAD
Mix the beans, sweetcorn and onion in a large bowl and drizzle with half the salad dressing.
Adjust the seasoning if necessary.
Add the rest of the salad dressing to the salad just before serving and mix lightly.
Garnish with lemon or lime slices and serve at room temperature.
