Cooked cocoa icing

Ingredients

  • 90
    g
    butter (not margarine)
  • 500
    g
    icing sugar
  • 25
    ml
    cocoa
  • 60
    ml
    milk
  • 2
    ml
    vanilla essence
 

Method

2-5 min
 
Melt butter in a heavy-bottomed saucepan. Sift in half the icing sugar and the cocoa. Add milk. Stir until completely smooth. Heat slowly until mixture comes to the boil and remove from heat. Sift in remaining icing sugar. Mix well. Add vanilla essence and more milk if the icing is too stiff. Pour over cake while still hot. Enough for one two-layer cake.
