Concertina kebabs with orange basting sauce

    onion, coarsely chopped

    clove garlic, crushed

    Worcestershire sauce

  • freshly ground black pepper to taste

    lamb flank

    pickling onions
  • 3
    green peppers, seeded and cut into fairly large pieces
 

Method

 
Sauté the onion and garlic in the heated cooking oil until soft. Add the remaining ingredients, bring to the boil and simmer for 5 minutes. Set aside. Thread the meat (cut into 2,5 cm wide strips) onto 8 thin wooden skewers to create a concertina effect, and alternate with the pickling onions and green peppers. Grill over moderate coals for medium: 7-10 minutes in total and for well done: 10-12 minutes in total. Baste the kebabs frequently with the basting sauce while grilling. Serves 8. Serve the kebabs in any one of the following ways * in a pita bread or hollowed-out French loaf * on a bed of cooked vegetables * on a bed of parsley and lettuce * on pasta or rice (for variation add sautéed cubes of red and green pepper, onions or chopped nuts to the cooked rice)
