Colourful pork casserole

    olive oil

    pork fillet, cubed
  • 1
    onion, chopped
  • 5
    ml
    grated ginger
  • 4
    cloves garlic, crushed
  • 15

    flour
  • 15
    ml
    coriander seeds
  • 5
    ml
    fresh thyme
  • 410

    chopped tomatoes
  • 400
    ml
    red wine
  • 350
    g
    butternut, cubed
  • 250
    g
    frozen corn
  • 2
    red peppers, cubed
 

Method

1 hour
 
Preheat oven to 180 ºC. Heat 15 ml oil over high heat and fry meat in batches until well browned. Remove and set aside. Heat remaining oil and fry onion, ginger and garlic until browned. Stir in flour and coriander seeds. Return meat to saucepan, add remaining ingredients and seasoning to taste. Bring to the boil. Remove from the heat and transfer to a greased ovenproof dish. Cover and bake in the oven for 45 minutes. Serves 4-6. To freeze: Cool completely, cover and seal well. Freeze until needed. Defrost in the fridge. Reheat in the microwave, or at 180 ºC for 30 minutes until piping hot.
