Ingredients (10)

480.00 ml flour — self-raising
250.00 g butter — unsalted, softened
290.00 ml castor sugar
4.00 eggs — at room temperature
5.00 ml vanilla — essence
15.00 ml milk — at room temperature
Butter Icing: softened butter
250.00 g icing sugar — sifted
1.00 pinch salt
30.00 ml milk
5.00 ml Food colouring

Method:

Preheat the oven to 200°C. Line the 12 hollows of a muffin tin with paper cups.

Place all the cake ingredients, except the milk, in a bowl and beat until well mixed. Add the milk a little at a time beating to form a smooth batter.

Spoon the batter into the paper cups and bake for 20 minutes or until done. Remove from the oven and cool in the tin for 5 minutes before transferring to a wire rack to cool completely.


Icing Cream together the butter, icing sugar, salt and enough milk to make a creamy icing that’s easy to spread. Divide the icing into 4 uniform quantities and colour each as desired. Spread the icing on top of the queen cakes and decorate as desired.
