Coleslaw with pickled ginger

    ml
    peanut or sesame oil
  • 250
    ml
    shredded red cabbage
  • 250
    ml
    shredded white cabbage
  • 125
    ml
    finely sliced pickled ginger
  • 5
    ml
    crushed garlic
  • 60
    ml
    rice wine vinegar
  • 20
    ml
    chopped fresh coriander
  • salt and pepper to taste
  • extra fresh coriander for garnishing
 

Method

 
Heat the oil in a large pan or wok and stir-fry the cabbage for two minutes.
Add the ginger, garlic, vinegar and coriander and sauté for another minutes.
Remove from the heat and leave to cool.
Season and garnish with fresh coriander.
