Cold marinated calamari

    calamari, cut into rings
  • 4
    bay leaves
  • 375
    ml
    oil
  • 65
    ml
    vinegar
  • 4
    onions, chopped
  • 1
    onion, sliced
  • 1
    large bunch fresh parsley
  • 3
    cloves garlic, crushed
  • salt and pepper to taste
  • 125
    ml
    lemon juice
  • 10
    ml
    peppercorns
 

Method

 
1. Cook calamari in boiling water with the bay leaves, peppercorns, sliced onion, a third of the parsley, salt and pepper until white and firm. 2. Put garlic, onions and remaining parsley into blender, process until fine. Add 100 ml oil, salt, pepper, lemon juice and vinegar, and mix again. Slowly add the remaining oil until mixture turns thick and creamy. 3. Pour over calamari and marinate overnight. Serve cold.
