Cold leg of lamb with humus sauce

Ingredients (4)

1.00 lamb — leg
6.00 garlic — cloves
10.00 ml dried mint
40.00 ml fresh chillies — 573

Method:

Make small incisions in the lamb and press a sliver of garlic into each.

Mix together the mint, olive oil and lemon zest. Rub the mixture all over the lamb. Place in a greased roasting tin and roast for 15 minutes in a preheated oven.

Reduce the heat to 170 ºC and continue to roast for 18 minutes per 500g weight of the leg.

To make the humus sauce, mix together humus and yoghurt.

Remove lamb from the oven
and set aside to cool. Carve
the lamb into thin slices and arrange on a platter. Drizzle
lemon juice over the slices
and garnish with fresh mint
leaves. Serve with humus sauce
on the side.
