Cold cucumber soup

  • 2
    English cucumbers, washed and cut into pieces
  • 5
    ml
    chicken stock powder
  • 80
    ml
    mayonnaise
  • salt and freshly ground black pepper
  • 15
    ml
    fresh dill
  • 80
    ml
    plain yoghurt
  • rind of 1 lemon
 

Method

 
Blend all the ingredients in a food processor until smooth. Chill for at least 2-3 hours before serving. Serve with garlic foccacia, wholewheat rolls or melba toast. Serves 4.
