Ingredients (5)

5.00 tomatoes
water
60.00 ml bovril
1.00 Litres water — boiled
100.00 g celery stalks — leaves

Method:

1. Using a sharp knife, make a cross at the base of the tomatoes, plunge them into boiling water and leave for a few minutes. Drain off hot water and replace with cold. Leave to cool.
2. Remove, peel and dice tomatoes.
3. Dissolve the Bovril in the boiling water to make a basic consommé. Add diced tomatoes (reserving some neatly diced 3 mm cubes for garnish) and celery leaves and simmer for 10 minutes.
4. Remove from the heat and strain through a fine sieve. Leave to cool. Garnish with reserved tomato cubes and serve cold.
