    instant Nescafé coffee granules

Method

 
Preheat the oven to 180 ºC (350 ºF). Grease a muffin tray with large hollows with margarine or spray with non-stick spray. Combine the crushed Weet Bix, wholewheat flour, baking powder, salt, sugar and coconut. Blend the egg, oil and coffee (dissolved in 250 ml boiling water) together. Add to the dry ingredients and blend well. Add the raisins and mix well. Spoon the mixture into the muffin tin hollows. Bake for about 30 minutes or until a testing skewer comes out clean when inserted into the centre of the muffins. Cover the muffins with aluminium foil if they are turning too brown and are not yet baked through. Serve with butter.
