    baking powder

    ground cinnamon

    instant Nescafé coffee
  • 300
    ml
    milk
  • 250
    ml
    cream, sweetened with
  • 30
    ml
    sugar
  • 125
    g
    butter
  • 175
    g
    castor sugar
  • 75
    g
    dark brown sugar
 

Method

 
Preheat oven to 180 ºC. Grease 2 x 20 cm sandwich tins. Beat together butter and sugars and whisk in egg, a little at a time. Sift together flour, baking powder and cinnamon and stir into butter mixture. Blend coffee with milk and stir into mixture. Divide between the tins. Bake at 180 ºC for 25 minutes, or until firm to the touch and a skewer inserted comes out clean. Cool on a rack and remove from tins. Sandwich together with whipped, sweetened cream. Serves 10.
