Ingredients (8)

60.00 g cornflour
220.00 g flour — cake
50.00 g icing sugar
salt — pinch
180.00 g butter
10.00 ml water — boiled
20.00 ml nescafé instant coffee granules
200.00 g chocolate

Method:

Sift the dry ingredients together. Rub in the butter. Blend the boiling water and instant coffee granules and add. Knead until smooth. Cover and chill for 30 minutes. Cut out shapes with a biscuit cutter and arrange the biscuits around the outer edge of the greased glass turntable of the microwave oven, leaving about 3 cm between the biscuits. Bake for 1 1/2 to 2 minutes on 100 per cent power and leave to cool on the turntable. Transfer to a wire rack. Repeat until all the biscuits have been baked. Melt the chocolate in the microwave oven on 50 per cent power and dip one end of each biscuit into the melted chocolate. Allow the chocolate to dry completely and store the biscuits an airtight container. The biscuits can also be sandwiched together with the chocolate to make double-decker biscuits.
Makes 70 single biscuits.
Tested in a 600 W microwave oven.
