    coconut milk

    nutmeg
  • 1
    ml
    ground cloves
  • salt and pepper
  • fresh coriander leaves, chopped or grated lemon rind
 

Method

 
Heat oil in a fairly large saucepan and stir-fry uncooked rice until completely coated with oil, about 2 minutes. Add coconut milk, water, coconut, nutmeg, ground cloves and salt and pepper to taste and bring to the boil. Reduce the heat and simmer until done, about 20 minutes. Loosen the rice grains with a fork, add a little chopped fresh coriander leaves or lemon rind to taste and serve. Serves 4.
