Coconut prawns on a stick

    large queen prawns, cleaned and deveined (shell if preferred)
  • 10
    sesame oil
  • 30
    red curry paste
  • 250
    coconut cream
  • 125
    dessicated coconut
  • lime wedges to serve


Thread the prawns on skewers through the length.
Heat half the oil in a large frying pan, add half the curry paste and stir-fry for a few seconds to release the flavours.
Add half the prawns and quickly sear them on both sides.
Remove the prawns.
Repeat the process, using the remaining oil, curry paste and prawns.
Add the coconut cream and dessicated coconut to the pan and bring to the boil.
Return all the prawns to the pan and simmer for 2 minutes.
Serve on a platter, garnished with lime wedges.
