    chopped fresh ginger

    sesame oil

    chicken stock

    coconut milk

    large prawns, heads removed

    fish sauce

    vermicelli, cooked

    mint leaves
  • 6
    spring onions, trimmed and sliced
  • 30
    ml
    lime juice
 

Method

 
Blend chillies, garlic, ginger, coriander and oil to a smooth paste. Stir-fiy over moderate heat for 2 minutes. Add stock, coconut milk and prawns and simmer for 5 minutes. Stir in fish sauce. Stir in remaining ingredients and serve.
