Coconut mushroom rice and chilli parcels

    clove garlic, crushed

    lemon juice

    fresh green or red chillies, chopped (use more if desired)

    anchovy paste
  • 25

    desiccated coconut
  • pinch chilli powder

    g
    fresh mushrooms, wiped

    ml
    short or long-grained rice
  • 500
    ml
    water
  • 250
    ml
    coconut cream
  • 2
    green chillies, seeded and chopped
  • 30
    ml
    fresh coriander leaves
  • 6
    banana leaves
 

Method

 
Mix garlic and lemon juice, then mix in chillies, anchovy paste, coconut (soaked in 60 ml (4 tbsp) boiling water for 30 minutes), chilli powder, salt and mushrooms (5 mm thick slices). Bring rice, water and coconut cream to boil and cook until liquid is almost all absorbed. Remove from stove and stir in chilli and coriander. Divide this, and coconut mixture, between banana leaves and fold over to make parcels. Steam in a steamer for 5 minutes. Serves 4.
