Coconut macaroons

    large eggs, separated
  • 1
    ml
    salt
  • 170
    g
    sugar
  • 235
    g
    coconut

Preheat oven to 160 ºC. Beat egg whites and salt until soft peaks form. Beat in the egg yolks, one at a time. Add sugar, a little at a time, beating well after each addition. Once sugar has dissolved, add coconut and mix well. Spoon teaspoonfuls of the mixture on to baking trays that have been lined with aluminium foil and greased. Bake in the oven for 15-20 minutes until golden. Cool on trays. Makes 35-40.
