Coconut loaf

    free-range eggs
  • 315

    (1 ¼ cups) soya milk or coconut milk
  • 300

    rice flour
  • 10
    ml
    (2tbsp) baking powder
  • 10
    ml
    (2tbsp) ground cinnamon
  • 225
    ml
    castor sugar
  • 150
    g
    desiccated coconut
  • 70
    g
    butter, melted
 

Method

Preheat the oven to 180°C.

Place eggs and milk in a bowl and beat.

Sift in flour, baking powder and cinnamon.

Add sugar and coconut.

Stir until well combined, and add butter.

Pour into a non-stick loaf pan, and bake for 1 hour or until a skewer inserted in the centre comes out clean.

Allow to cook and remove from pan.
