Coconut-crusted bacon twists

Ingredients

  • 250
    g
    thickly sliced bacon
  • 125
    ml
    tomato purée
  • 45
    ml
    honey
  • 15
    ml
    barbecue spice
  • 30
    ml
    soft brown sugar
  • 50
    g
    coconut, toasted
 

Method

15 minutes
 
Twist each piece of bacon around a skewer.
Mix the tomato purée, honey, barbecue spice and sugar.
Baste the bacon twists and sprinkle with coconut.
Grill until crisp and golden.
Serve with baked sweet potatoes and seasonal vegetables.

VARIATION
Instead of twisting the bacon onto skewers, grill the rashers and serve on a hotdog roll with sliced avocado, thinly sliced tomato and crisp lettuce.
